LIGHT STRAWBERRY CHARLOTTE

This is the perfect cool summer dessert made with fresh pureed strawberries, yogurt and Nilla wafers.

INGREDIENTS

  • 1  pint   strawberries, hulled
  • 2  (4-serving size)   packages ROYAL Strawberry Gelatin
  • 1 1/2  cups   boiling water
  • 1  (8-ounce)   container vanilla lowfat yogurt
  • 32    vanilla wafers
  •     Prepared whipped topping, optional

DIRECTIONS

  1. Reserve 1 strawberry for garnish. Puree remaining strawberries in electric blender until smooth.
  2. Dissolve gelatin in boiling water in medium bowl; stir in pureed strawberries. Refrigerate until slightly thickened, about 30 minutes.
  3. Stir in yogurt. Beat with electric mixer at low speed until light and fluffy.
  4. Line bottom and sides of 9-inch pie plate with wafers; pour in strawberry mixture. Refrigerate 2 hours or until set. Garnish with whipped topping and reserved strawberry if desired.
