PEACHY COOL SOUP

Use your blender to bring a taste of summer to the table when you whip up this cool and creamy peach soup.

Makes about 4 cups

INGREDIENTS

  • 1    (4-serving size) package ROYAL Instant Vanilla Pudding & Pie Filling
  • 2  cups   cold milk
  • 1  (16-ounce)   can sliced peaches in light syrup, undrained and chilled
  • 1/4  teaspoon   grated lemon or orange peel
  • 1  (8-ounce)   container sour cream or plain yogurt
  • 1    to 2 tablespoons almond-flavored liqueur, optional

DIRECTIONS

  1. Blend pudding mix and milk in electric blender container at low speed 1 minute. Add remaining ingredients; blend until smooth.
  2. Pour into bowls to serve immediately or cover and chill until serving time. (Thin to desired consistency with additional milk if necessary.)
  3. STRAWBERRY SOUP: Increase milk to 2 1/2 cups and substitute 1 (10-ounce) package frozen strawberries in light syrup for peaches. Serving Suggestion: Prepare peach and strawberry soups
  4. and pour simultaneously into each serving bowl to swirl.
