ROCKY ROAD PIE (RIP)

Walnuts and marshmallows with chocolate pie filling make a delicious pie topped with whipped cream.

INGREDIENTS

  • 18    graham crackers, finely crushed (about 1 1/4 cups crumbs)
  • 1/4  cup   sugar
  • 1/3  cup   margarine or butter, melted
  • 1    (4-serving size) package instant chocolate pudding & pie filling
  • 1 1/2  cups   cold milk
  • 1 1/2  cups   heavy cream, whipped, divided
  • 1  cup   Miniature Marshmallows
  • 3/4  cup   Walnuts, chopped, divided

DIRECTIONS

  1. Mix crumbs, sugar and margarine or butter in small bowl; press on bottom and up side of 9-inch pie plate. Set aside.
  2. Prepare pudding mix according to package directions for pie using milk; let stand 2 minutes. Fold in half the whipped cream, marshmallows and 1/2 cup chopped walnuts.
  3. Pour into prepared crust; refrigerate at least 2 hours. Serve garnished with remaining whipped cream and chopped walnuts.
