MINI CHERRY SOUFFLES

This fluffy dessert soufflé is filled with the flavors of cherries and almond and chilled.

INGREDIENTS

  • 1    (4-serving size) package ROYAL SugarFree Cherry Gelatin
  • 1  cup   boiling water
  • 1/2  cup   cold water
  • 1/2  teaspoon   almond extract
  • 1  cup   prepared whipped topping
  • 4    maraschino cherries, for garnish
  • 1  tablespoon   Sliced Almonds, for garnish

DIRECTIONS

  1. Dissolve gelatin in boiling water; stir in cold water and almond extract. Refrigerate until slightly thickened.
  2. Beat slightly thickened gelatin until light and fluffy. Fold in whipped topping. Spoon mixture into 4 (6-ounce) dishes which have been fitted with 1/2-inch foil collars. Refrigerate until firm, about 3 hours.
  3. To serve, remove foil; garnish with maraschino cherries and almonds.
