FROSTY CUCUMBER MOLD

This cool cucumber congealed salad is flavored with tangy citrus and fresh dill.

Makes 8 to 10 servings

INGREDIENTS

  • 2    (4-serving size) packages ROYAL Lime Gelatin*
  • 2  cups   boiling water
  • 1 1/2  cups   sour cream
  • 2  teaspoons   lemon juice
  • 2  cups   peeled, seeded and finely chopped cucumbers
  • 1/4  cup   chopped green onions
  • 1  teaspoon   dried dill weed
  •     Lemon twist, dill sprig and cucumber slices, for garnish

DIRECTIONS

  1. Dissolve gelatin in boiling water. Stir in sour cream and lemon juice with wire wisk until smooth; refrigerate until mixture mounds.
  2. Stir in cucumbers, green onions and dill; spoon into 6-cup mold. Refrigerate until firm, about 4 hours.
  3. Unmold onto serving plate; garnish with lemon twist, dill and cucumbers.
  4. *2 (4-serving size) packages ROYAL SugarFree Lime Gelatin may be substituted.
