LEMON CHEESE DESSERT

Individual sponge cakes become elegant desserts when you top them with this delicious cream cheese filling and fresh strawberries.

INGREDIENTS

  • 1    (4-serving size) package MY*T*FINE Lemon Pudding and Pie Filling
  • 1/2  cup   sugar
  • 2  cups   water, divided
  • 2    egg yolks
  • 1  (3-ounce)   package cream cheese, cubed and softened
  • 6    sponge cake dessert shells
  •     Strawberry halves, for garnish

DIRECTIONS

  1. Blend pudding, sugar and 1/4 cup water in saucepan.
  2. Stir in egg yolks, remaining water and cream cheese. Cook according to package directions (cream cheese will melt).
  3. Pour into bowl. Cover pudding surface directly with plastic wrap and refrigerate 2 hours.
  4. Spoon over dessert shells and refrigerate until serving time.
  5. Garnish with strawberry halves to serve.
